Renowned Chef Tsutomu Ochiai, the creator of the uni (sea urchin) pasta, fell in love with Italy’s philosophy of “simple recipes with the freshest ingredients” during a personal culinary journey to Europe. He brought his passion for Italian cuisine home to Japan nearly 40 years ago where he rose to prominence for his authentic Italian fare. La Bettola Waikiki is Chef Ochiai’s first and only restaurant outside of Japan.
